Aappam
Aappam is tasty, lacy and fluffy dosas from the South India cuisine that are made from rice, poha and lentils batter. Thin and crispy around the edges with soft fluffy center. Aappam taste delicious when paired with vegetable curry/chutney for a hearty vegetarian breakfast/dinner. They also just so happen to be gluten-free and vegan. Use the batter within a week when stored in refrigerator.

How to make Aappam Dosa
1. Grease the pan with little oil and heat it. Do not over heat the pan. You can also use a kadai and make dosas in kadai shape (Aapa Kadai).
2. Spread the batter quickly, add ghee/oil/butter and cover the dosa for a min to cook.
3. You do not need to flip and cook the Aappam.
4. Serve hot with the chutney of your choice.
